Cookbook'19 is an exhibition at La Panacée in Montpellier, France, that gathers 25 chefs and 20 artists. Roberto Cabot collaborated with the collective Cozinha Radicante on the project Manioc Usine which consisted in the construction and activation of a manioc processing unit and the edition of a journal that supported the project in its content (see link to the e-version of the journal: https://issuu.com/cozinharadicante/docs/manioc_usine_tabloid). The choice of the manioc root as thematic was led by the fact that it is a cultural object, result of centuries of agricultural development by the amazonian civilizations, it gave us the opportunity to work on the themes of alimentary culture, colonialism and decolonization of the minds. It also allows us to call attention to the great amazonian cultures which are right now under attack, specially by the recently elected Brazilian government, and that need urgently the solidarity of the international community. Manioc is also a crop of the future, having been elected the food crop of the XXI century by the United Nations, as it feeds nowadays about a billion inhabitants of planet earth and will be fundamental to the survival of mankind in the context of climate change. Manioc is very economic in water needs, does not require pesticides or chemical fertilisers and grows well on poor soils, being very resistant to heat. It is also a central element of food culture in South America and Africa, with great participation in local myths and traditions.
